What is Vemakase?

Vemakase is a term coined by Chef Joyce's son, transitioning from Vegan Omakase to "Vemakase" since 2020. It refers to a tasting menu style similar to Kaiseki, degustation, or tapas. This concept involves presenting a variety of dishes in small portions, showcasing the chef's impeccable cutting and culinary skills while preserving the natural flavors of whole, real food. Our current menu draws inspiration from the revered Temple food of Japan, Korea, and Hong Kong, renowned for its emphasis on clean, whole food diets, devoid of oil and allium. We take pride in our culinary skills, which focus on low sodium and sugar preparation methods, allowing the natural flavors of the ingredients to shine. Unlike conventional practices, we avoid the use of added sugars and rely on the inherent sweetness of ingredients like amazake, figs, papaya, pumpkin, and sweet potatoes to enhance the taste of our dishes.
